Jorge Rodriguez | Toronto Cocktail Conference

Jorge got his start in hospitality at 18 as a bar back in Mexico City and pretty quickly worked his way behind the bar. After that, he went the kitchen route, eventually working in restaurants like Actinolite and Quetzal, where he built a strong foundation in technique and flavour. During the pandemic, he started getting into cocktails on his own, learning through books, trial and error, and a lot of conversations with friends in the industry. It didn’t take long before that turned into a full shift behind the bar.

In 2021, after a season working as a sous chef in BC, he came back to Toronto and committed to bartending. He spent some time at Marked Restaurant before joining the team at Quetzal, where he really found his rhythm. Since then, he’s helped open Overpressure Club and Civil Works. He’s the kind of bartender who cares a lot about how things are built behind the scenes, but just as much about making people feel at ease when they sit at the bar.
