Santiago Galvis

Santiago Galvis | Toronto Cocktail Conference

Santiago Galvis began his journey in hospitality in 2009 at Medieval Times while pursuing studies in Aerospace Engineering. Since then, he has built a diverse and well-rounded career, working across a wide range of venues including Italian restaurants, steakhouses, Michelin-level dining establishments, and craft cocktail bars. His experience also extends into restaurant management within a corporate setting, giving him a strong foundation in both operations and leadership.

Santiago’s true passion for bartending was ignited during his time at the Hawaiian-inspired bar Miss Things, where he fell in love with the creativity and artistry behind the craft. Over the past six years, he has further honed this passion by participating in cocktail competitions, using them as an outlet to innovate and express his style.

Now serving as the Bar Manager at Suite 115 Cocktail Bar, Santiago brings his extensive experience and hospitality-first mindset to every shift. He is dedicated to creating memorable guest experiences, ensuring that every person who sits at his bar feels welcomed, engaged, and well taken care of.
