Born and raised in the GTA (shout out to Oshawa), Julia Segal has lived and breathed hospitality in New York, San Francisco, Chicago and Milan. She is an experience designer, educator and consultant.
Over the course of her career, Julia has worked on a variety of food and hospitality spaces, focusing on concept development, layouts and design. Most recently, she has worked in tech, developing and opening over 100 employee restaurants at companies like Google, YouTube, and Verily.
Prior to the tech bubble, Julia opened Eataly Chicago’s 65,000 sqft Marketplace, and oversaw the daily operations of 8 kitchens and central production as well as their retail department. She has worked with many growing food businesses to turn single locations into scalable, systems-driven branded concepts. Julia teaches Hospitality Management and Restaurant industry courses at universities around the world.
Living in Oakland, CA, Julia makes homemade vermouth and occasionally does standup comedy.
